Texas Wow Brisket

Discover the secrets to creating a mouthwatering brisket with our step-by-step guide, designed for both beginners and seasoned smokers.

Ingredients

  • Brisket
  • Texas Wow Factor Dry Rub
  • Bottle of Yellow Mustard (enough to coat brisket completely)

Preparing Your Brisket

4 Servings

30 min Prep

12-15 Hour Smoke

Trim excess fat off brisket, leaving only a thin layer of fat on brisket.

Rub Yellow Mustard all over brisket to ensure the mixed rub sticks to brisket evenly and completely.

Coat the entire brisket with rub and place it in a pan. Cover with Plastic Wrap or Aluminum Foil and set in refrigerator for three hours. Overnight is ideal.

Smoking Your Brisket

Step 1

Turn smoker to 270° Fahrenheit and place water pan on bottom rack.

Once smoker is heated to 270° Fahrenheit, add smoke pellets to smoker. You’ll need to add more throughout cooking time (about 3-4 times).

Step 2

Add the brisket (side with most fat on top) and set temp to 220° Fahrenheit and cook for about 1.5 hours per pound (typically 12-15 hours). Two-Thirds of the way through, or when brisket has an internal temperature of 150° Fahrenheit, remove brisket, wrap in foil and place back in smoker for remaining time.

Step 3

Once the brisket is complete, or an internal temperature of 170° Fahrenheit, take it out of smoker and place it in an oven or microwave to cool it down slowly.

If it needs to sit longer, keep in an oven set at 150° or place in refrigerator until you can get to it.

Step 4

Slice the brisket against the grain and about ¼” thick, shred brisket, or cut into small ¼” cubes for sandwiches.
